• IDEAL PAIRING
Zardetto Prosecco DOC Rosé is the ideal companion of every joyful cheers with friends. At the same time, it is perfect with avocado and shrimp’s salad, cream cheese tarts and raw shellfish.
• PRODUCTION AREA
Various vineyards in the Prosecco DOC region, in Veneto and Friuli Venezia Giulia. The soils are mainly clay based, with some gravelly spots close to the main rivers.
• COMPOSITION
Glera with up to 15% Pinot Noir.
VINIFICATION
Both Glera and Pinot Noir are harvested in the month of September. The Glera grapes are harvested mechanically and rushed to the winery to ensure maximum freshness; destemmed, soft pressed, cooled down and separated from the skins. At this point the must is decanted and added with the select yeasts to induce the first fermentation, which lasts about 10 days at the controlled temperate of 64-68°F. The Pinot Noir is instead vinified in red where the pressed grapes are transferred directly into the tanks and the skins removed after about 6 hours; the fermentation process takes 15 days at the controlled temperature of 71°F. After that, the 2 varieties are filtered and blended in stainless steel autoclave by the desired percentage and undergo a 60-day-long second fermentation with the aid of select yeasts and sweetening agents at a controlled temperature of 59 °F. Finally, the resulting sparkling wine is filtered and bottled.
